What does “FU” mean? It’s German - "Fortbildung und Umschulung" - “Training and Re-training” and this is what we do. We help people to update their existing skills and learn new ones.
As well as our specialty, Spanish as a Foreign Language we are run courses for the Canarian Employment Service jointly funded by the European Union.
Subjects include: Computer training, Digital retouching and picture scanning, Payroll accounting and Social-Cultural monitors, a course which trains carers to look after the young and the old.
It’s great to see the Academy full of students and buzzing with activity. We teach Spanish all year round (only closing for Christmas day and New Year’s Day) and the winter is one of our busiest times. Like swallows fleeing a cold climate students flock down from northern countries to over winter in Tenerife and pick up the valuable skill of a second language, and take up an internship in hotels and businesses.
Not forgetting the fact that we also teach English, Italian, German, and now Chinese!
Our Spanish for Business courses are for students with Intermediate to Advanced level Spanish (A2 – C2) who want to improve their business related vocabulary and general language skills.
The courses include specific vocabulary and language for:

Rabbit with 'Salmorejo' Sauce - Conejo en salmorejo
If you are too happy about cooking our little furry friends you can use chicken joints instead.
This dish's origins go back hundreds of years. It is most likely that it was introduced to kitchens in the17th and 18th Century. In 1737 the term "salmorejo" appeared for the first time, referring to a sauce to garnish rabbit dishes, and prepared using peppers, salt and vinegar.
Take a rabbit cut it into small pieces, salt slightly and put into a casserole or clay dish. For the 'salmorejo' sauce, mash together one teaspoonful of coarse salt, six garlic cloves, half a teaspoon of paprika and a red pepper. Then add some oil and vinegar. Stir it and spread it over the meat. Pour in a glass of white wine, add a laurel leaf, rosemary and thyme, sttir well and marinate from four to eight hours. To cook fry the pieces and put them into another dish.
Once they are fried, heat the remaining 'salmorejo' and pour it over the fried rabbit. Simmer for half an hour and serve with small boiled potatoes. If you your food bit spicy you can add some chili during the marinating stage or final cooking.
